This medium-grain (or semi-long) rice is a real treasure of Valencian cuisine, although nowadays it’s not widely cultivated around here. The main production comes from the Ebro Delta (which, by the way, is a beautiful area). But what makes this rice special? Well, it’s an authentic species at risk of extinction in the world of rice varieties!

Bahía is similar to the famous senia, but it has one key difference: it’s much better at absorbing flavors. Whether it’s meat, seafood, or a little bit of broth, this rice soaks it all up like a sponge! And the best part: its low amylose content means it stays super fluffy. No stickiness at all!
